Simple meal, morning and evening.
Grilled sticky rice is another traditional

Recipes
Materials
250g
glutinous rice (soaked for at least 3 hours overnight if possible)
2
pieces of banana leaves (Blanch leaves before use for hygiene purposes) cut
into 4 x 2 inches
200 ml coconut milk
1
cup shredded coconut unswettened (for better results use fresh grated coconut)
4-5 shallots
4-5
tablespoons dried shrimp (soaked in water for 15 minutes and then dried)
2 tsp
ground coriander
A wax beans
1 small piece
belacan shrimp paste aka (roasted and ground)
Some toothpicks to
seal the parcel
Method
Start
by mixing the glutinous rice with coconut, then steamed for 30 minutes until
rice is fluffy and good translucent. When done, set aside
and let cool.
Mix
the dried shrimp, shallots, coriander powder, wax beans, and shrimp paste.
The
hot pan, fry the mixture using a little oil until you get a lovely spicy scent.
Add
enough oil so you get a paste like mixture.
Next
add grated coconut and give a good stir. You
need to stir the mixture constantly to avoid burning over. When done, set aside
and let cool.
Now,
time to wrap-up. began
to break down some rice on banana leaf lengthwise you, then top with a
combination of top-up with a little more rice. When
finished, fold in both the top and bottom of the banana leaf. Secures the sides with
toothpicks. Oil
compartment to prevent them from burnt when grilling later.
Once you've
wrapped all your boxes. Put
them in a roasting oven (or bbq pit) and allow the grill for 20-30 minutes. Wonderful
smell of a banana leaf can be channeled into the rice that lovely aroma.
Serve hot!
